Red Pepper and Feta Quiche on the BBQ
Ingredients:
3 eggs
300g crème fraîche
100g comté cheese or cheddar - grated
½ nutmeg - grated
1 red pepper
100g feta - crumbled
1 pie crust
Method:
First up, grill the red peppers on the barbecue until they brown and then chop finely.
Lay your pie crust over a greased pie tin.
Place the red pepper and crumbled feta on the crust.
Mix the eggs, crème fraiche, grated cheese and grated nutmeg. Then add salt and pepper.
Poor the mix on the crust.
Place the pie tin on the grill and bake over direct medium heat with the lid closed for about 15 minutes, until golden brown.
Finally, decrease the temperature of the grill to low heat (120°C to 180°C) with the lid closed until the filling is dry in the centre, about 15 minutes more.
